Solutions to affordable locally grown food access in low-income communities is linked to existing assumptions around the delivery design of food systems. These delivery designs have an impact on issues of food security, food justice, sovereignty, and community development. Moreover, the lack of access to fresh affordable produce in these communities contributes to the disproportionate impact on the health and well being of community residents. In this course, students will have the opportunity to generate and develop social entrepreneurial ventures that will address these challenges in any of five areas that currently have an effect on access to affordable fresh produce in low income communities: transportation costs, community organizing, scalability, creation of a cold chain, and access to financing. Students wishing to work on other barriers outside of those proposed are encouraged to do so.
